Cowboy Bebop OST 1 by Seatbelts.
Fantastic soundtrack that you can enjoy all the way through. Every song is amazing, just like the show.
FLCL OST 1 - Addict by The Pillows.
My favorite band of all time. Awesome instrumental versions of their previous tracks (especially Advice), with a few new tracks just for the show.

I bought the soundtrack to Amelie yesterday, I simply adore every single song on it! They make me think of love.
I also like listening to my Wicked soundtrack, it's....wicked..

Settlers II <-- Well, thaaat's old... But great soundtracks, principally if the audio weren't DOS audio 
Lord Of the Rings. Games and Films. I love the musics.

Spirited Away, Castle In the Sky, Kiki's Delivery Service, My Neighbor Totoro. Most of the Miyazaki films. Also, Planet ES has a nice soundtrack too. I've never seen the show though. Little Miss Sunshine has a really good soundtrack, and I like the music from The Sims 2 (especially Seasons ;3). That's about it.

Anime, first. Death Note has quite a varied OST - it's a mixture of rock, metal, j-rock, classical and latin choir music. Definitely recommended. Code Geass also has quite a rousing soundtrack, well worth downloading.
Television-wise, the Doctor Who OST is recommended, if a little hard to find outside of torrents. Other than that, I can't think of many outstanding TV OSTs.
Likewise with movies, I don't usually take much interest in the soundtracks. However, the Lord of the Rings and Star Wars both have memorable OSTs. Pirates of the Caribbean deserves a mention as well.
Video games, there are far too many to list. However, the Final Fantasy series has consistently produced amazing soundtracks right back to the first few games. FFXII, FFVIII and FFTA2 are especially of note. Fire Emblem, particularly the recent 3D games, has quite a few good OSTs - definitely some of the best battle themes, and a few nice themes.
I'm quite a nerd for soundtracks. They probably make up at least a third of my music on my computer. :P

I have almost all the pokémon soundtracks on my coumputer. I have seasons 1-10 + the pokérap and a few of the movies soundtracks.
Other than pokémon I really like halo soundtracks.

I like all of them from Pokemon, One Piece, and Bleach. I like the English ones of Pokemon and the Japanese of One Piece and Bleach.

Brawl, Hitch, Hairspray, Rent, Avenue Q, Mew and the Wave-Guiding Hero: Lucario, Sonic Heroes, Sonic Adventure 2, Super Mario Sunshine, Holes, Sister Act, Sonic CD, Sonic 3 & Knuckles, Super Mario Galaxy, Super Mario RPG, Smashing...Live!, Super Smash Bros. Brawl Cut Tracks and Purple Rain are all the soundtracks I have on my iTunes. I soon hope to add the Lilo & Stitch soundtrack to my collection.
