What is the actual order of the Gyms as you are meant to play them in? I always mix up Sabrina and Koga and apparently so do others. I just want to be sure.

1. Brock
2. Misty
3. Surge
4. Erika
5. Koga
6. Sabrina
7. Blaine
8. Giovanni
Yeah, I usually forget that Erika even exists until I absolutely have to battle her.

Sabrina seems like she'd be right after Erika because Saffron City is so close. But it makes more sense with Koga. Gives you more time to level up and such because the highest level jumps from 29 to 43.

This is a major source of confusion that I'm amazed hasn't been solved earlier. I don't believe there is a difference in playing either Gym first, however, I've seen it both ways. I always go to Koga first because of the training available surrounding Fuchsia, and the Pokedex must-have Safari Zone.
The way that I remember especially is to look at the pattern of badges. Every second badge gives you some Lv. (max that will obey you). So, here's the example:
Brock: Can use HM05 outside of battle (?)
Misty: Up to Lv. 30 Pokemon will obey you
And so on down the line. Well, Sabrina's badge gives you up to Lv. 70, and Koga's badge only gives you the ability to Surf. So, by the prior logic, Koga is first, and then Sabrina.
Hope this helps!

i think koga comes before sabrina. koga has lower level pokemon highest being of 41-39 i believe, whereas sabrina's a tad higher

I will recommend to battle Koga first, because his badge allow you to use Surf outside of battle.

They actually have similar level Pokemon, so it doesn't really matter which you battle first. However, the extra training you'll get while going down Cycling Road (or the longer way from the south of Lavender Town) is going to be good, so you might as well go for Koga first. It also boils down to whether you need control up to Level 70 or the ability to Surf more.

I usually go to Koga first, for Surf, Articuno, Safari Zone, Cycling Road, Snorlax, Leftovers, Strenght, Rare Candy, Safari Zone Items...
Once on my FireRed I skipped Sabrina, I went up to the Viridian Gym, found it locked at saw I still needed Sabrina's badge.

Well in my first game Yellow I fought Sabrinia first, and since then always saw it as a challenge so in previous games continued the tradition. It's just personal preference though, doesn't really matter. I'm pretty sure Koga is supposed to be first though.

I just replayed FireRed a couple weeks ago and after Erika I believe I did Koga, Blaine, Sabrina then Giovanni. Mostly because I wanted a Growlithe and Squirtle was my starter. =P

You know, I've never thought of it that way...
But I guess that the Gyms will challenge you if you get there.
I'd figure the best way to solve this problem is to look at a trainer card. They always have the badges in the order that the game intended.
I'm not as sure now, but I still stick behind what I said earlier on badges' effects...
