Is it possible to EV train more than one stat?
Oh and when will I notice a differnce? My friend says it depends on the pokemon but idk.

You can EV in however many stats you like, but only two can be filled to 255. However, if two are at 255, you can't put any more in. There is a cap of 510.
You'd notice a larger difference if you put in a lot at a higher level.

Every 4 EVs gives a point that stat, which might not be apparent immediately but eventually you will see the difference in stats. Since EVs should be gained in sets of 4, there is no point putting in 255 in two stats. You should be 252 in each of those stats, and invest the remaining 4 EVs into a third stat, probably HP if you can't figure out which stat to improve. That leaves you with 2 EVs, which is weird I know, but in the first place the limit of 510 isn't a multiple of 4.
An example of such a build is 252 Sp Def, 252 Def, 6 HP, for a tank.

i have a question about the training of Ev's.
If i trained my Swampert-Careful Nature- to get 255 Defense Ev's in Magma Hideout do i have to train him to 100 by hand (wild pokemon or trainers) or can i just feed it rare candies till lvl 100?
The reason i am asking is because at first i tried it by getting 255 Defense Ev's, getting 5-6 Def stat each lvl up , but then i gave it rare candies till lvl 100. and i no longer got the same Bonuses.
Any help is appreciated.

While you are in the process of gaining EVs, your stats will rise quicker; once you've finished gaining them all, they will not increase quite as much, but you will still be getting the same end result.

The bonus in stats is calculated by the change in stats (from the direct stat calculations). If you are in the process of EV training, the change in stats will be greater because of the stat calculations. When you use Rare Candies, though, there is likely no change in the EVs, and therefore the bonuses do not seem as high.
EV training only is applied after the next levelup (except for the use of vitamins such as Protein in their respective stat).

All in all it doesn't matter when your Pokemon gains EVs, nor does it matter when it levels up and how it levels up. As long as the EVs gained are the same, your Pokemon will end up with the same stats anyway when it reaches level 100.
