Alakazam. The Umbreon has Hyper Beam, and a Blissey will absolutely get destroyed by that strong of a physical move. The Alakazam might too, but it's Defense is quite a bit higher than Blissey's (although it's still not very high.)

Tyranitar, then. Gengar is weak against the Dark-Type cat, while Tyranitar is resistant. That and I think T-Tar has better stats overall anyway.

Yes of course, the battle is exactly that of a real trainer battle. You have no items to use though, you must find these in the pike. In this battle, the ditto is an exact copy of Gengar and will attack with the right moves to beat you. He will not use prediction though.
