Vaporeon kills Roxanne
Espeon kills brawly
jolteon kills watson (volt-absorb)
Vaporeon kills lavaridge
Flareon with HP fighting kills Norman
Jolteon and Vaporeon with Ice beam kills winona
Vaporeon, Espeon, and umbreon kill tate and liza
Jolteon kills juan/wallace
HP Flareon kills sidney and phoebe
Jolteon kills glacia
Vaporeon kills drake's dragons
All together kill the champions (Juan and Steven)
I could see needing a heracross, though. Flareon needs a fighting move.

Since Hidden Power is determined by DVs, you cannot change it's type. The only way to do so is to breed for a pokemon for a certain Hidden Power. To find out your pokemon's hidden power type, click here.
Ontopic: I'm too lazy to check, but can all of the Eeveelutions combined learn the HMs? If not, then the answer is no.

HP is hidden power. The type and base damage is based on individual values, also known as IVs. These values are set when you hatch an egg, but can only be calculated when a pokemon is at level 100. A very complicated subject, so you should go here

They can't learn Fly, off the top of my head. They might not need it, but I'm checking the others. . . .

So you have Cut, Surf, Flash, Waterfall, Dive
You don't have Fly, Strength, or Rock Smash.
I suggest, that since you have room for an extra Pokémon, you can add Heracross (If you don't need Fly) or Tropius (If you do want Fly). Tropius can learn all three HMs that the Eeveelutions can't, and Heracross can learn Strength and Rock Smash, and it has good Fighting moves.

Oh, wow. I don't think about things like that. HM moves are typically overlooked by me, as I usually asign drones and slaves.

Yeah, I'm using the last slot for an HM slave. I'm not using it in battle or anything. Just to free up space for my Eeveelutions =]

HM slaves are good pokemon deep down. if you ignore the types, its mostly powerful with surf or stregnth.

Not trying to be a Necro - I was on vacation the past nine days but before I left, I ended up training my Jolteon and guess what attack he learned...
Double Kick
So there's a potential fighting move since my Flareon didn't provide me a HP Fighting.

1.) Necromany is 3 weeks, not 1.5 weeks, so don't worry (unless you bring up a topic to just spam/post an unneeded comment)
2.) Yes, Jolteon does get double kick. the problem is that the attack is rather dismal, and that is why we usually don't put it on.

Oh... well what if I amp up Jolteon's attack? Would that increase its chances of it not being so dismal?

How do you amp up Jolteon's Attack? The problem doesn't really lie with Jolteon, it's just that Double-Kick has a base power of 30 each, aka 60 combined. It's decent, but not very good.

Could I not just use Protein?
& what if it's super effective against a vulnerable type, is it still 60 or more?

I believe that when a move is super - effective on a pokemon 2x, the power is doubled, hence making the power 120 instead of 60.

Ignoring HM nessesities, I'd say yes. You could beat all of the games with the Eeveelutions.
As for Upping Jolty's attack for Double kick, I doubt it would help much. Jolteon's attack is really not that good, so... No.

i like i dont relley like the rest but i get them 4 there data
I now this is off topic but shuldnt this be on the kanto topic cause u cant get the eevee or any of them in hoenn without cheating

Uh.. I traded my Eevee from LG to Emerald. Breeded for the right number of eggs. Hatched them. Evolved them. Traded them to Sapphire.

Anyways, so even if I max out Jolteon's ATK, it won't do much of a help?

Well actually, aside from hidden power and t-bolt + t-wave, jolteon passes.
Why do I say this?
Because, If not using as a passer, you could use it as a kicker, sure. It would be like a filler move, if you know what I mean.

ALSO,
don't you find it a bit odd how Umbreon cannot learn Theif when it is a Dark move and Umbreon is dark and it just seems to fit? lol, I dunno...

Can't rate sets here. But:
1.) Redundancies - if you're going with Thunder, why T-bolt?
I'd go with either T-bolt + T-wave or Rain Dance + Thunder.
