I think everyone should have a full team for each type, and you could go on outings with all one type, or mix and match types. This is what I do, and I'm wondering, is this a good idea?

This is not a good idea. If you have a team with all water types, you would get owned by a team resistant to water or a team containing electric or grass type moves or a mixture of both.
But most people know this.

Not necessarily.
A good team can counter the things it's weak against. Other team using an Alakazam with Choice Specs Grass Knot? Simply slap a Choice Scarf on a Sharpedo (zomg lol) and OHKO him.
Likewise, it's not like a team only has STAB moves in its arsenal. Almost every Water type gets Ice Beam, which, paired with Surf, is neutral to most pokes in the game that aren't water types themselves.
If you have any doubts, I do happen to have a water team of my own, and it has a winning record against typical OU teams. You could see if your team can beat it.
About half of the types can counter what they're weak to and have the versatility to make an entire team out of it, such as Ice, Grass, Rock, and Water. The other half, such as Fire and Electricity, have a much tougher time.
