That has more to do with the berry you use. Sounds like you used a spicy and bitter? berry.

The best way (I guess) is to go as fast as possible without making an overflow.

The sparklies happen when all the stirrers line up. They supposedly combat things like burning and overflow, though I haven't seen any evidence of this. I think they may just increase the poffin level.

My strategy for poffinmaking:
At the start, stir the batter slowly and steadily; keep it going, but don't get it near the top.
When the fire turns blue, STIR LIKE THE HORDES OF HELL ARE AFTER YOU.

I get decent-level poffins with that technique.

There are three stages to poffin making:

Yellow flames, the mix is runny and spills easy.
Red flames, the mix is thicker but can still spill.
Blue flames, it's thickest and can't spill.

Keep the edge of the mix as close to the edge as possible. If you look, you'll see each stage has a pretty defined edge (the first stage is white, but it's easy to see). Keep that as close to the edge as possible, while keeping a pixel or two space to keep from spilling.

Make sure you switch directions as quickly as possible. It doesn't have to be super fast.

If you spill or burn a poffin while making it, trash it. It won't be worth using.

You can't spill when the flames are blue. Spin as fast as you can.

Try and get your time under 40 seconds. You'll get pretty decent poffins that way. Pay attention to the feel of the berries you're using, as that affects the smoothness of the poffin. The lower the smooth, the more your poke can eat. The faster you make the poffins, the higher the level.

Don't repeat berries when cooking with a friend. Two of the same berries will net you a foul poffin, level 2 with random flavors. You don't want that, throw it away. You'll also get a foul poffin should the levels and everything of the poffin fall below 0.

There's an excellent FAQ on GameFAQs that touches on all these points, as well as gives pointers on making poffins for Feebas:

Spills only have like a 1 level effect when going solo, I've still gotten a level 20 poffin with a spill, it's not worth trashing just because of a spill, and average of level 20 still maxes out whatever trait you're going for with some to spare in my experience.

I guess that's just a habit of mine. When I was making Wiki berry poffins for my Feebas, I trashed any under level 21.

I don't even think it needs to be higher than rank 15 poffins to be able to evolve into milotic.

Very helpful thread, I think poor Poffin making may have been what's ruined my Roserade for Master Rank competitions. Thanks for all the handy pointers, now I won't make the same mistake twice :D

So if you use lower leveled poffins will Feebas not evolve?

That won´t work, you need to use lvl 20 and above

So do I need to start over, or can I start feeding higher level poffins now & evlove it?

Hmmm well depending on how many weaker ones you fed it, you might be able to still make it with higher rank ones to balance it out.

That's easiest with a friend.

I've only fed it a few, I think like 5 or so. I think I'll just breed a new one & only use lvl 20 or higher poffins. Thnx.

How much do you need to max out a Contest stat (beauty, cool, etc.)?

Well, if you do it with 20s you have plenty to spare, so I'd say an average of 17 or 18 will get you to max, but hey better safe than sorry. I'd shoot for 19 just so I wouldn't have to worry about it.

Or you can work with a friend on poffins and that'll do it pretty effectively.

But you don't need only level 20 and above to get to max, just don't throw away 19s since they worked just fine for me. My pokemon also liked that poffin type, if that has anything to do with it.

That's because it's full. My Swampert is full. It won't accept my Poffins. That's
what happened to yours.

Ok, so your saying my pokemon has been "full" for a week. Wow that must have been some poffin.
